When you're applying the various paints for nonskid and smooth areas, how do you define the edge where the two meet? Do you mask the nonskid areas smaller than they'll eventually be, applying white paint into the nonskid area, then tape off for nonskid, covering a bit of white, and paint those sections?

No. The edge is the edge. When I tape off the smooth areas for the nonskid later, I follow the same line, without any planned overlap, though I always ensure that the nonskid overlaps enough onto the smooth to cover the edge. The smooth paint, particularly in the case of LPU, forms a thick enough film that it's easy to tape just inside that hard edge, thereby allowing the nonskid to just cover the edge.
