Fuel shutoff valves
What is a good source for fuel shutoff valves? What features, if any, make for a good valve?

Use any of the brass 1/4-turn valves sold specifically for this purpose. There are a couple different styles, but they all work the same. Flow and pressure ratings are rarely an issue for sailboats with their miserly fuel consumption.
Some valves also incorporate anti-siphon protection, which is required for gasoline installations (though you can have a separate valve and anti-siphon device instead of a combined unit). There are specific requirements for valves used in a gasoline fuel system, though most fuel valves meet these requirements by virtue of their being fuel valves.
These valves are readily available at any marine supplier. Pick your favorite.
Just be sure to mount the valve where it is easily accessible.

I should have added that there are devices that automatically provide the anti-siphon protection without necessarily requiring closing the shutoff valve.
